Fondue Tomato

  • 3 whole tomatoes (on the vine)
  • 3 tbsp shallots
  • 1 tbsp Smart Balance
  • 1 tsp fresh thyme (chopped )
  • 2 cloves garlic (diced)

Bouquet Garni – (tie together with branch of thyme)

  • 1 stick celery
  • 1 stick carrots
  1. Blanch tomatoes until you see skin start to peel.

  2. Remove tomatoes from water

  3. Peel and de-seed out tomatoes

  4. Finely chop tomatoes

  5. Melt butter in a small pot

  6. Adding shallots, garlic, cooking on low for 2 minutes

  7. Add tomatoes, thyme, and Bouquet Garni to pot

  8. Cook uncovered for 15 – 20 minutes on low or until water from tomatoes are gone
