Gather and prepare ingredients.

  • 3 – whole – tomatoes on the vine

  • 3 – tbsp – Shallots

  • 1 – tbsp – Smart Balance

  • 1 – tsp – fresh thyme – chopped

  • 2 – whole – garlic clove – diced

Bouquet Garni

  • 1 – stick – celery

  • 1 – stick – carrot

Tie together with a branch of thyme.

Start Cook’n

  • Blanch tomatoes in boiling water until skin starts to peel.

  • Remove tomatoes from water, peel and seed.

  • Finely chop tomatoes

  • In small pot melt butter

  • Add shallots, garlic and cook on low for 2 mins

  • Add tomatoes, thyme and Bouquet Garni.

  • Cook on low uncovered for 15 to 20 mins or until water from tomatoes are gone
