
Gather and prepare ingredients.
3 – whole – tomatoes on the vine
3 – tbsp – Shallots
1 – tbsp – Smart Balance
1 – tsp – fresh thyme – chopped
2 – whole – garlic clove – diced
Bouquet Garni
1 – stick – celery
1 – stick – carrot
Tie together with a branch of thyme.
Start Cook’n
Blanch tomatoes in boiling water until skin starts to peel.
Remove tomatoes from water, peel and seed.
Finely chop tomatoes
In small pot melt butter
Add shallots, garlic and cook on low for 2 mins
Add tomatoes, thyme and Bouquet Garni.
Cook on low uncovered for 15 to 20 mins or until water from tomatoes are gone
