
Blueberry Sauce
2 cups fresh or frozen blueberries
1/2 cup water
1/4 cup turbinado sugar
1 tablespoons fresh lime juice
Zest of 1 lime
1 tablespoons cornstarch, mixed with 2 tablespoons cold water
Directions
In a saucepan combine all ingredients except the cornstarch. Bring to a simmer then add cornstarch previously with the 4 Tablespoons of water while stirring. Simmer while stirring for 2 to 3 minutes. Check flavor . A voila
Pancakes
2 cup prairies gold flour
1/2 cup unbleached white flour
1 TBSP baking powder
1/4 tsp salt
1 tsp Vanilla or 1/8 t almond flavoring (optional)
1/4 tsp Cinnamon
3 TBSP turbinado sugar
2 TBSP of grounded flaxseed
3 cup Soy milk
Directions
Add blueberry, and crushed walnuts if desired.
Combined all ingredients except baking powder and mix well, then add baking powder. Do not over mix so that pancake can be light and fluffy.
Spray your skillet and enjoy making pancakes.
