• 2 cups ice cold water
  • 1 teaspoons Baking yeast
  • 1-1/2 cup whole wheat flour (Prairie Gold brand preferred)
  • 3 cup unbleached white flour
  • 2 teaspoons salt
  • 1/4 cup Olive oil


Mix on low for 5 minutes, and then on medium speed for 5 minutes. The dough should be tacky but not sticky. Let dough rest until it has doubled in size. Knead the dough to lightly degas. Place dough in refrigerator overnight well covered. You can keep it up to 3 days in refrigerator.
Remove the dough from refrigerator and divide the dough to 15 oz portions. Let them sit at room temperature at least 2 hours before use.
Preheat oven to 500 degrees (F).
Dust your pizza pan with cornmeal. Roll dough, stretch dough, and press the dough into pizza pan. Add the sauce and ingredients of your choice. Bake for 15 minutes, or until the crust and cheese are golden brown.
