
Pulled Jackfruit
Ingredients
•2 20oz cans young green jackfruit,
•2 tablespoon olive oil
•1 onion, diced
•1 teaspoons smoke paprika
•1 teaspoons chipotle (optional)
•3 cloves garlic, minced
•1/2 cup vegetable broth
•1 cup BBQ sauce
Instructions
•Preheat your oven to 400F (200C). Lightly grease a baking pan.
•Drain and rinse the jackfruit. Pull jackfruit with your hands .
•Add the olive oil to a large skillet over medium-high heat, and when hot add the onions. Sauté until the onions are tender then add garlic and spices . Add in the chopped jackfruit and vegetable broth. Cover and continue to cook another 8 to 10 minutes, until the jackfruit is soft enough .
•To finish the jackfruit mix the jackfruit with BBQ then spread it into a baking pan evenly and pop it in the oven for 15 to 20 minutes.
Coleslaw
- 12 oz coleslaw mix vegetables
- 1 lemon (juiced)
- 1/2 cup vegenaise
- 1 tbsp sriracha
- 1 dash maple syrup
- 1/2 tbsp dijon mustard
- salt to taste)
Mix all ingredients together and chill for 20 to 40 minutes
BBQ tempeh
•1 teaspoons smoke paprika
•1 teaspoons chipotle (optional)
•3 cloves garlic, minced
•1/2 cup vegetable broth
•1 cup BBQ sauce
•1 Package of tempeh
Directions
Diced and steam tempeh for 10 minutes
then add half of the marinated BBQ mixture. Let it rest for 20-40 minutes. Bake at 450 degrees F for about 8 minutes until crispy. Glaze with the remainder of the marinated mixture and bake another 8 minutes.
