
Makes 4 servings
Ingredients:
1 lb fresh tofu firm
2 TBSP Olive oil
1/4 cup diced onion
3 cloves garlic, minced
2 TBSP diced celery
2 TBSP diced green onion
1/4. cup diced green bell pepper
2 TBSP nutritional yeast flakes
1/4tsp kosher salt
1 dash sage
1/4 tsp turmeric
1 tsp fresh rosemary, chopped
1 TBSP basil shredded
Directions:
Sauté onion, bell pepper, celery, and garlic in a skillet with olive oil. Drain water from tofu. Mash tofu with a fork . Add mashed tofu to the skillet with the sautéed veggies. Add green onion, rosemary and seasonings, except basil. Cook on low heat for 5 minutes, add basil, and cook for another 5 minutes.
This scrambled tofu is amazing; very yummy!
